A focus on folate! Folate (vitamin B-9) & it’s synthetic form, folic acid can help decrease our risk of several diseases. Folate prevents damage to our DNA, which can help decrease our cancer risk. Folate also helps decrease harmful homocysteine levels, which can decrease our risk of heart disease, stroke, & Alzheimer’s disease. In addition, the expert physicians at TriHealth’s Women’s Services cite folate as critical to women of child-bearing age to prevent birth defects during pregnancy.
This recipe courtesy of the registered dietitians with the TriHealth Fitness & Health Pavilion contains both spinach & strawberries, which are good sources of folate! This recipe is versatile because you can swap in other dark leafy greens, fruits (oranges are fantastic in this recipe), & nuts (walnuts are a great option)! Starting your meal with a veggie salad full of fiber & antioxidants can not only help decrease your risk of several diseases, but can help fill you up & prevent overeating. 10 oz. spinach
- 1 qt. strawberries
- ¼ c. slivered almonds
- 4 oz. feta cheese
- Optional: red onion
- 1/3-1/2 c. olive oil
- ¼-1/3 c. balsamic vinegar
- 2-4T. sugar or honey
- 1 tsp. dry mustard
- In a large bowl: toss the spinach with the strawberries & toasted almonds.
- In another small bowl, whisk together all dressing ingredients.
- Pour over spinach & toss to combine.
- Sprinkle feta over the top of salad.
- Serve immediately.
