Recipe: Sizzling Grilled Fruit Kabobs

Apples are more than a tasty on-the-go snack. They offer an excellent source of soluble fiber, a nutrient responsible for reducing the LDL - or "bad" - component of cholesterol. Liven up your summer grilling fare with sizzling grilled fruit kabobs for a light side dish with vitamins to boot.

Ingredients:

  • 2 apples - cored and sliced
  • 2 peaches - cored and sliced
  • 1/2 of a medium pineapple - cored and sliced into 1- to 1/2-inch pieces
  • Ground cinnamon

Directions:

Place apple slices, peach slices and pineapple chunks on a water-soaked skewer. Sprinkle kabobs with ground cinnamon for an extra kick of antioxidants. Grill the fruit until golden-brown in color. Serve with chilled fruit dip (recipe below).

Fruit Dip:

Ingredients

  • 2 cups plain low-fat yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

Directions:

Combine ingredients and stir together. Add more honey or lemon juice depending on your taste preferences. Serve as a sweet complement to fruit kabobs or any fresh fruit.
