1 (15 oz) can of corn
1 (15 oz) can of kidney beans or black beans, rinsed and drained well
1 (15 oz) can of garbanzo beans, rinsed and drained well
1/3 cup finely diced white/red onion
1 pint cherry tomatoes, quartered
Dressing
¼ cup olive oil
¼ cup apple cider vinegar (more if you like)
2-3 tablespoons sugar
1 teaspoons minced garlic
1 teaspoon salt, plus additional to taste
1 teaspoon Dijon mustard
Fresh ground black pepper, to taste
